Coconut Butternut Squash Soup – Cook the squash and aromatics in advance, purée and simmer for a quick weeknight meal.

Vegetable Baked Ziti – make the sauce, and shred the cheese in advance.

Kale Pesto – make up to 4 days in advance.

Fried Rice – coldleftover rice works best.
