This recipe was sent to us by Cathy Koken, the Market Manager of the Ithaca Farmers’ Market.
6-8 cups rhubarb
1 cup water
1 ½-2 cups sugar
2-3 tbsp minute tapioca
Wash rhubarb and dice. Put in saucepan with sugar and bring to a boil. Add tapioca and stir until well mixed. Cool and serve.
Great on yogurt, oatmeal, cottage cheese.
