Week 15: September 16th – 20th
We’re easing our way into fall with roasted vegetables, simple soups, and braised fennel two ways. It’s truly an awesome time in our CSA season! Winter squashes are starting to come in from the fields, onions are cured and bagged, we have a lot in store for the remainder of the season AND our winter share boxes! This week’s share includes delicata squash – the first winter squash of the season! Delicata squash can be eaten peeled or unpeeled and is great roasted. Try our Stuffed Squash tutorial, and see what you come up with. It’s an on week for beets (as much as possible we’re alternating carrots and beets), more fennel, and this week we have more broccoli! The peppers are still coming in, you’ll have a variety of carmen red peppers and yellow bells or all bell peppers. Napa cabbage is making a return, and is great in soups for the fall.

Planning ahead can make meals easy during the week. If you have time grab kitchen partner and do a little chopping ahead of time. During the week pull out your prepped items and our recipes are even easier.
Pork Chops. Slice the onions and fennel ahead of time.
Cider Braised Fennel & Kale. Chop everything ahead of time.
Squash. Make the grain, and prep the squash ahead.
Ramen. Pre chop the veggies and the soup will come together very quickly.
Escarole Salad. Make the dressing ahead of time.
Balsamic Beets. Peel and chop the beets.
