If you’re jonesing for a creamy green drink this year you don’t have to go through the drive thru! This smoothie is easy, dairy free, and 100% natural. Surprise your little ones before school on St Patrick’s Day (or any day for that matter), make a quick snack, or if you’re feeling cheeky you could probably turn this into a cocktail. Start with naturally green and lush kale, add orange juice, and creamy coconut milk. We can also call this a “Greensicle” For this smoothie I used the full fat coconut milk, not coconut water or milk substitute. I use raw kale in smoothies, and frozen bananas to give it that smoothie like consistency. Cutting the kale into fine shreds helps it break down in the blender. Layer the coconut milk, orange juice, and bananas into the blender with the kale on top. Pulse everything together and add up to a cup of water while blending if necessary. The only change I’d make is to add the juice of 1/2 lemon if you want to mellow out the kale.
Shamrock Smoothie makes about 3 – 8oz smoothies
1 cup coconut milk
1/2 cup orange juice
2 frozen bananas
4 leaves kale, stems removed and chopped (should equal about 2 cups chopped)
water, if necessary
juice from 1/2 a lemon – optional
Layer ingredients in blender in the order listed. Pulse together until combined, adding water if necessary. Blend on high until smooth and creamy. Add lemon if desired to reduce the bitterness of the kale.
